Water Quality is led by Henrik Sorenson from Denmark

Henrik Adam has been interested in tea since his first travel to China in 2002 and has been studying Chado, the Japanese Way of Tea, since 2006.

Henrik is a Chemical Engineer (Msc.) by profession with experience from the food industry and attended courses on PhD - level in the social sciences in the field of learning and philosophy.

Hence, there is a deep interest in exploring both the philosophy of tea and the quality of tea as a beverage.

Currently, Henrik is working for a solution provider in the circular economy to battle plastics pollution and is engaged in his own endeavor to promote tea philosophy with events in Denmark.

Specialty Tea, in particular, is sensitive to the quality of water that is known to strongly influence the experience of drinking tea.

For this reason, this sub-committee is appointed to explore the quality of water in its various applications.

The main areas of focus are set out to be:

·       Water as a resource and the availability qualities on the market

·       Chemical, physical and biological characteristics of water

·       Usage of water for various tea brewing techniques
